or any other time...Energy Bites!
Even though we are supposed to be 'Safe at Home: many are still grocery shopping enough to clean out the baking isles. Here is a recipe for a healthy alternative to processed sugar and flour cookies. This Energy Bite will naturally give you a sweet treat from the dates and a protein packed power punch from the nuts. Only 4 basic ingredients or you can embellish with flavorings of your choice if you want to improve on the basic recipe. I make a few different batches while I am at it and freeze them. That way when I need a quick pick me up snack, I can grab 2 or 3 balls out and I am ready to go. Be careful though...these are so yummy you should only eat at the most 2 or 3 as a serving size.

Serving Size: 1 or 2 as a preworkout
3 as a snack/meal with water or green tea
Ingredients
1 c. Dates
1/2 c. of 2 of your favorite Nuts
*You can use any mixture or combo of cashews/walnuts/pecans/almonds. Just a total of 1 C.
¼ c. cacao
1 tsp vanilla
Directions
In a food processor, grind up your nuts.
After a few seconds, add the dates and vanilla and process more. It will be noisy!
Check after a few more seconds to make sure it will stick together to form into balls
Add the cocoa powder for the final mixing.
Roll into balls. Makes about 15-16. Store in fridge or freezer in an airtight container.
The balls are good as is here or you can customize with flavorings.
*Substitute dark cocoa powder for regular
*Add Mint flavor with mini bits of mint chips or peppermint pieces.
*Add cinnamon
*Add coconut flavor and 1 or 2 tbsps finely flaked coconut
*Add a dash of Pink Sea Salt and mini caramel bits
